Ingredients
- •425g tinned tuna in springwater, drained
- •500g sweet potato, boiled and mashed
- •1 red onion, finely diced
- •2 tbsp fresh parsley, chopped
- •1 tbsp mild curry powder
- •50g plain flour
- •1 egg
- •150g natural yoghurt for serving
- •1 cucumber, sliced
Method
- 1Peel and cube the sweet potato, then boil until soft enough to mash.
- 2Drain the tuna thoroughly and place it into a large mixing bowl.
- 3Add the mashed sweet potato, diced onion, parsley, and curry powder to the bowl.
- 4Crack the egg into the mixture and sprinkle with the flour.
- 5Use your hands or a fork to mix everything together until well combined.
- 6Divide the mixture into 8 equal portions and shape them into patties.
- 7If the mixture is too soft, add an extra tablespoon of flour.
- 8Heat a non-stick frypan over medium-high heat with a splash of oil.
- 9Cook the patties for 4 minutes on each side until they form a golden crust.
- 10Avoid flipping the patties too early or they may break apart.
- 11Transfer to a plate and serve warm.
- 12Garnish with a dollop of yoghurt and side slices of fresh cucumber.
💡 Tips
- • Chill the patties in the fridge for 20 minutes before cooking to help them hold their shape.
- • Tinned tuna in springwater is cheaper and easier to season to your own taste.
- • Mash the sweet potato while it is still warm to make the patties smoother.
