🧄 Marinade
Hoisin, soy sauce, sugar, ginger, garlic, and cornflour.
Ingredients
- •500g beef rump steak, thinly sliced
- •300g broccoli florets
- •1 red capsicum, sliced
- •2 spring onions, chopped
- •4 tbsp hoisin sauce
- •2 tbsp soy sauce
- •1 tbsp brown sugar
- •1 tbsp grated ginger
- •2 cloves garlic, minced
- •1 tbsp sesame seeds
- •1 tbsp cornflour
Method
- 1Combine hoisin, soy sauce, sugar, ginger, garlic, and cornflour in a small bowl to create the sauce.
- 2Heat a large frying pan or wok over high heat with a splash of oil.
- 3Add the sliced beef strips in batches to ensure they brown rather than steam.
- 4Remove the browned beef from the pan and set it aside on a plate.
- 5Add the broccoli and capsicum to the same pan with a tablespoon of water.
- 6Cover the pan with a lid for 2 minutes to steam the vegetables until tender-crisp.
- 7Remove the lid and stir-fry until any excess water has evaporated.
- 8Return the beef and any resting juices back to the pan.
- 9Pour the sauce mixture over the ingredients and toss well.
- 10Cook for 1-2 minutes until the sauce has thickened and coated everything glossy.
- 11If the sauce becomes too thick, splash in a little extra water to loosen it.
- 12Remove from heat and stir in the spring onions.
- 13Serve immediately topped with sesame seeds.
💡 Tips
- • Slice the beef against the grain for maximum tenderness.
- • Buy broccoli in season to save significantly on your total grocery bill.
- • Keep the heat high to get a quick sear without overcooking the meat.
