Smoky Paprika and Honey Mix

Ingredients

  • •800g chicken Marylands
  • •600g sweet potato, cubed
  • •2 carrots, sliced into rounds
  • •1 red onion, chopped
  • •2 tbsp smoked paprika
  • •1 tbsp honey
  • •30ml vegetable oil
  • •1 tsp ground cumin
  • •Fresh parsley to garnish

Method

  1. 1Preheat oven to 200°C.
  2. 2In a large bowl, whisk together oil, paprika, honey, and cumin.
  3. 3Add the sweet potato, carrots, and onion to the bowl and coat with the spice mix.
  4. 4Place vegetables on a large baking sheet.
  5. 5Place chicken Marylands on top of the vegetables.
  6. 6Rub any remaining marinade onto the chicken skin.
  7. 7Season generously with salt and pepper.
  8. 8Bake for 50 minutes until chicken is golden and crispy.
  9. 9Use a meat thermometer or check the juices run clear to ensure safety.
  10. 10If the vegetables are browning too fast, cover loosely with foil.
  11. 11Sprinkle with fresh parsley before serving.
  12. 12Ensure the sweet potato is fork-tender before removing from the oven.

💡 Tips

  • • Buying whole Marylands is often cheaper than individual cuts.
  • • Reuse the bowl from the marinade to minimize washing up.
  • • Add a dash of chili flakes if you prefer heat.
