Ingredients
- •500g beef mince
- •3 medium potatoes, diced into 1cm cubes
- •1 brown onion, diced
- •200g frozen peas
- •1 tsp smoked paprika
- •1 tsp dried oregano
- •250ml beef stock
- •1 tbsp tomato paste
- •Fresh parsley for garnish
Method
- 1Place the diced potatoes in a microwave-safe bowl with a splash of water.
- 2Microwave on high for 5-6 minutes until just tender to speed up cooking.
- 3Heat a large skillet over medium-high heat with a drizzle of oil.
- 4Add the beef mince and cook until browned, using a spoon to break up large chunks.
- 5Add the onion and cook for 3 minutes until softened.
- 6Stir in the paprika, oregano, and tomato paste, cooking for 1 minute to release the aromas.
- 7Add the pre-cooked potatoes to the skillet.
- 8Pour in the beef stock, scraping up any browned bits from the bottom of the pan.
- 9Reduce heat to medium and simmer for 5-7 minutes until the liquid has reduced into a thick sauce.
- 10Stir in the frozen peas and cook for 2 minutes until bright green.
- 11If the skillet looks dry before potatoes are cooked, add another small splash of stock.
- 12Taste and adjust seasoning with salt and pepper.
- 13Remove from heat and garnish with chopped parsley.
💡 Tips
- • Microwaving the potatoes first saves significant cooking time on the stove.
- • Frozen peas are the cheapest way to add green vegetables to a dish.
- • Use generic brand beef stock cubes to keep costs low.
