Ingredients
- •600g frozen hake fillets, thawed
- •100g plain flour
- •2 eggs, lightly beaten
- •200g panko breadcrumbs
- •1 tsp dried oregano
- •1 tsp garlic powder
- •1 lemon, cut into wedges
- •250g frozen peas
- •400g potatoes, peeled and chopped
Method
- 1Boil the potatoes in salted water for 15 minutes until tender, then drain and mash well.
- 2Steam the frozen peas until bright green and tender, then set aside.
- 3Pat the thawed hake fillets dry with a paper towel to ensure the coating sticks properly.
- 4Place the flour on a plate, the beaten eggs in a shallow bowl, and the panko breadcrumbs on a separate plate.
- 5Season the breadcrumbs with the dried oregano and garlic powder, mixing thoroughly.
- 6Dredge each fillet in the flour, shaking off any excess.
- 7Dip the floured fish into the egg mixture until fully coated.
- 8Press the fish into the breadcrumbs, ensuring an even coating on all sides.
- 9Heat 3 tablespoons of oil in a large non-stick frypan over medium heat.
- 10Place the fish in the pan and cook for 4-5 minutes on each side until golden brown and flaky.
- 11Ensure the internal temperature reaches 63°C if you have a meat thermometer.
- 12Remove from the pan and drain briefly on paper towels to remove excess oil.
- 13Serve immediately with the warm mash, peas, and fresh lemon wedges.
💡 Tips
- • Buy frozen hake in bulk packs to save significantly over fresh market prices.
- • Use stale bread turned into coarse crumbs if panko is too expensive.
- • Ensure the oil is hot before adding the fish to prevent the coating from becoming greasy.
