Ingredients

  • •8 pork sausages
  • •2 cans cannellini beans, drained
  • •400g canned crushed tomatoes
  • •1 brown onion, diced
  • •2 cloves garlic, crushed
  • •1 tsp smoked paprika
  • •2 cups vegetable stock
  • •1 cup frozen peas
  • •1 tbsp fresh parsley, chopped

Method

  1. 1Heat a large, deep skillet or frypan over medium heat.
  2. 2Add the sausages to the pan and brown them on all sides.
  3. 3Remove the sausages once browned and slice them into thick rounds.
  4. 4In the same pan, add the onion and cook until soft and translucent.
  5. 5Add the crushed garlic and smoked paprika, cooking for 1 minute until fragrant.
  6. 6Pour in the crushed tomatoes and the vegetable stock.
  7. 7Stir in the drained cannellini beans and the sliced sausage rounds.
  8. 8Bring the liquid to a gentle simmer and reduce heat to low.
  9. 9Cover the pan and cook for 20 minutes to let the flavours develop.
  10. 10Remove the lid and add the frozen peas to the pan.
  11. 11Simmer uncovered for another 5 minutes until the sauce thickens slightly.
  12. 12Stir through the fresh parsley just before serving.
  13. 13Taste and adjust seasoning with extra pepper if desired.
  14. 14Serve hot in shallow bowls, perhaps with crusty bread on the side.

💡 Tips

  • • Use store-brand canned beans to cut down your food bill.
  • • Buy sausages in the economy bulk pack and freeze what you don't need.
  • • If you have leftover bread, toast it to serve as an accompaniment.
