🧄 Marinade

1 tsp ground cumin, 1 tsp smoked paprika, lime juice

Ingredients

  • •600g frozen basa fillets, thawed
  • •4 large tomatoes, diced
  • •1 small red onion, finely chopped
  • •1 bunch coriander, chopped
  • •1 lime, juiced
  • •1 tsp ground cumin
  • •1 tsp smoked paprika
  • •400g canned chickpeas, rinsed
  • •2 tbsp olive oil

Method

  1. 1Thaw the basa fillets completely and pat dry with a paper towel.
  2. 2In a small bowl, combine the diced tomatoes, red onion, and coriander.
  3. 3Squeeze the lime juice over the tomato mix and stir well to create the salsa.
  4. 4Season the basa fillets with salt, pepper, cumin, and smoked paprika.
  5. 5Heat the oil in a large frypan over medium-high heat.
  6. 6Place the basa fillets carefully into the pan, ensuring they are not crowded.
  7. 7Cook for 3-4 minutes on the first side until the edges turn white.
  8. 8Flip the fish carefully using a wide spatula to prevent it from flaking apart.
  9. 9Cook for another 2-3 minutes on the other side until opaque and tender.
  10. 10Add the chickpeas to the pan during the last minute of cooking to warm them through.
  11. 11Serve the fish warm, topped generously with the fresh tomato salsa.
  12. 12Drizzle any remaining lime juices from the salsa bowl over the fish.

💡 Tips

  • • Patting the basa dry removes moisture which allows for a better sear in the pan.
  • • Use a wide spatula to flip the delicate fillets to prevent them from breaking.
  • • Frozen basa is a great low-cost substitute for more expensive white fish.
