- •2 packs (400g) udon noodles
- •2 bunches baby bok choy, chopped
- •1 large carrot, julienned
- •3 tbsp oyster sauce
- •2 tbsp soy sauce
- •1 tbsp rice vinegar
- •2 cloves garlic, minced
- •1 tsp chilli flakes (optional)
- •2 spring onions, sliced
Method
- 1Prepare the udon noodles according to packet instructions, usually by soaking in boiling water for 1 minute.
- 2Drain the noodles well and rinse under cold water to prevent sticking.
- 3Heat a large wok or deep frying pan over medium-high heat.
- 4Add the beef mince and cook, breaking it up with a wooden spoon, until browned.
- 5Add the carrot and garlic to the mince, frying for 2 minutes until fragrant.
- 6In a small jug, whisk together the oyster sauce, soy sauce, vinegar, and chilli flakes.
- 7Add the bok choy to the pan and cook for 1 minute until just wilted.
- 8Add the drained noodles to the pan.
- 9Pour the sauce mixture over the noodles and beef.
- 10Toss everything together for 2 minutes until the noodles are heated through.
- 11If the noodles seem dry, add a tablespoon of water or soy sauce.
- 12Turn off the heat and garnish with spring onions.
- 13Serve in deep bowls immediately.
💡 Tips
- • Use beef mince as a cheaper alternative to steak strips.
- • Rinse noodles in cold water to stop the cooking process and keep them chewy.
- • Buy vegetables in bulk or packs rather than individual loose items to save.
