Ingredients
- •400g frozen corn kernels, thawed
- •150g self-raising flour
- •2 large eggs
- •100ml milk
- •1 bunch spring onions, finely sliced
- •50g cheddar cheese, grated
- •1 tsp ground cumin
- •0.5 tsp smoked paprika
- •Salt and pepper to taste
- •Oil for frying
Method
- 1In a large mixing bowl, combine the thawed corn, flour, cumin, and paprika.
- 2Add the spring onions and grated cheese to the dry ingredients.
- 3Whisk the eggs and milk together in a separate small bowl.
- 4Pour the wet ingredients into the corn mixture and stir until just combined.
- 5If the batter looks too runny, add an extra tablespoon of flour.
- 6Heat 2 tablespoons of oil in a large non-stick frypan over medium heat.
- 7Spoon 2 tablespoons of batter into the pan for each fritter.
- 8Flatten the fritters slightly with the back of the spoon.
- 9Cook for 3 to 4 minutes until golden brown on the bottom.
- 10Carefully flip and cook for another 3 minutes until firm.
- 11Place cooked fritters on a paper towel-lined plate to drain excess oil.
- 12Repeat with the remaining batter, adding more oil if necessary.
- 13Serve warm with a side of sour cream or sweet chilli sauce if desired.
💡 Tips
- • Drain corn thoroughly to ensure fritters stay crispy.
- • Use frozen corn as it is often cheaper than canned varieties.
- • Make a double batch and freeze them for quick mid-week lunches.
